So I made the dog treats and I’ve got most of a can of pumpkin leftover. Now what? Here’s what I did:
I made this Pumpkin Cinnamon Applesauce that I found here.
I didn’t add either the vanilla or lemon juice and it still came out soooooo tasty! I guess I should have actually looked at the recipe instead of just winging it. I used 3 large apples which was probably less than the 2 1/2 lbs the recipe calls even though I did use 1/2 cup of pumpkin. The result was pumpkin flavor with a hint of apple sweetness with that yummy cinnamon. I’m not sure I’ll ever consider plain applesauce sufficient ever again!
I also made some pumpkin pudding, similar to this recipe here.
I only had 1 Cup of pumpkin at this point and I don’t keep a can of evaporated milk around at all times. Here’s how I made mine:
1 1/2 Cups Milk (I used 1%)
1 Cup Pumpkin
1 package Instant Vanilla Pudding, 4 serving size (I used sugar-free)
1 tsp Pumpkin Pie Spice (I might had put in a bit more….)
Divide into 4 serving dishes and chill.
I would have put some whipped cream on top if I had any, but I didn’t. Crushed graham crackers or granola would make a nice crispy topping. I didn’t have those, either. We ate it plain and loved every bite!
As this is the season of Pumpkin-Spice-Everything, finding plain canned pumpkin isn’t much of a challenge. I also plan to buy a few sugar pumpkins and make some pumpkin puree from scratch to put in the freezer. Either way, I foresee a lot of pumpkin in my future.
